
Poulet en Croute de Sel (Chicken in Salt Baked Crust)

1 chicken salt and pepper to taste
sprig of rosemary
bay leaf
3 chicken livers
Crust: 1 kg flour
1 kg coarse sea salt
6 tbsp cold water
Method:
- Make a dough with the flour, sea salt and add the water. Knead well and roll out on a pasty board.
- Rub salt and pepper inside the chicken and place the sprigor rosemary, bay leaf and chicken livers in the cavity.
- Wrap the chicken with the dough. Place on a baking sheet and bake in moderate oven 325deg.F or gas 3 for 1hour.
- To serve: Break off the crust and discard.
- Carve the chicken and serve with a salad dressed with walnut oil
