Poulet en Croute de Sel (Chicken in Salt Baked Crust)
Ingredients:

1 chicken salt and pepper to taste
sprig of rosemary
bay leaf
3 chicken livers

Crust: 1 kg flour
1 kg coarse sea salt
6 tbsp cold water

Method:

  1. Make a dough with the flour, sea salt and add the water. Knead well and roll out on a pasty board.
  2. Rub salt and pepper inside the chicken and place the sprigor rosemary, bay leaf and chicken livers in the cavity.
  3. Wrap the chicken with the dough. Place on a baking sheet and bake in moderate oven 325deg.F or gas 3 for 1hour.
  4. To serve: Break off the crust and discard.
  5. Carve the chicken and serve with a salad dressed with walnut oil
