White Chocolate Peanut Butter Cookies
(makes a batch of around 15 to 20 depending on size)

Ingredients:

2 cups plain flour
_ tsp baking soda
_ cup butter
1/2 cup white sugar
_ cup packed brown sugar
3/4 cup peanut butter (crunchy or smooth, does not matter)
2 eggs 3 tablespoons vanilla essence
White chocolate bits

Method:

  1. In a bowl, beat the butter, peanut butter and the two sugars till fairly smooth.
  2. Add in the eggs and vanilla essence. Beat well.
  3. Add in flour and baking soda. You may need a little more flour, just add in a little at a time.
  4. The dough should be soft to the touch, but should not stick to your finger when touched.
  5. Place a little dough on a plastic sheet. Place another plastic sheet on top of it and roll out to the required thickness.
  6. Preheat oven to 180oC.
  7. Cut into heart shapes and place on a greased cookie sheet and decorate with white chocolate bits.
  8. Bake for 10 to 12 minutes.
