Rich Chocolate Lovers Ice Cream with Crystallized Ginger and Hazelnuts

Preparation time Ð 30 minutes
Serves - 4

Ingredients:
2 _ cups full cream milk
2 _ cups cream
1 large block milk chocolate Ð to be melted*
_ cup cocoa powder Ð to be mixed to a paste with milk
6 large egg yolks
1&1/2 cups castor sugar
1 cup chocolate chips
_ cup crystallized ginger Ð to be chopped roughly
_ cup toasted hazelnuts Ð to be cut into small bits
a few hazelnuts and crystallized ginger pieces for garnishing

Method:

  1. Place the milk and cream in a bowl and boil over medium heat. Do not boil it, just heat it up.
  2. In a another heatproof bowl, beat eggs and castor sugar, once it is frothy and thickened, place this bowl into a bowl of simmering water, this has to be on low heat.
  3. Beat gently adding in the cream and milk mixture, melted chocolate, chocolate paste, ginger and hazelnut bits. Boil for another 10 minutes, until the mixture coats the back of a spoon. It should resemble runny cream at this stage.
  4. Leave it to cool, and stir it from time to time to prevent it from developing a crust. Freeze the mixture for about 1_ hours or till half frozen. It may take longer depending on the quantity.
  5. Once it is set, place it immediately it in a mixer and beat it for about 30 to 40 seconds, and refreeze in a container with a lid.
*To melt chocolate

Chop the chocolates into small uniform pieces and place it in a dry bowl. Boil a pot of water. It would be a good idea if your bowl fits perfectly into the pot. Once the water is boiling, turn the heat down to its lowest and place the bowl of chocolate over the pot. You may place the melted chocolate bowl over the hot water (away from the heat) when you are using it.
